THE CANON BREAKER
Mike did have an idea for this one, but we found out there actually is a cocktail called the Canon Cocktail, created by bartender Jamie Boudreau at the Canon Whiskey and Bitters Emporium out in Mike’s neck of the woods, Seattle, WA. For the Canon Breaker you will need:
1 oz. (60 ml) Rye Whiskey
I used my favorite, Rittenhouse Bottled in Bond
½ oz. (30 ml) Sweet Vermouth
½ oz. Ramazotti Amaro
Angostura bitters
Cointreau foam

Combine the first 3 ingredients in a cocktail mixing glass and stir with ice. Pour into a large chilled rocks glass. Now. The Canon bar has a proprietary Cointreau foam that goes on top. They have one of those CO2 foaming dispensers, which I do not possess. So what I did was combine ½ oz. Cointreau with ½ oz. lemon juice, ¼ oz. (15 ml) simple syrup, and an egg white, then used a coffee whipper to blend it up into a nice foam. ⅛ tsp of cream of tartar powder will help stabilize the foam, if you have it, which I do.
Pour the foam onto the top of the cocktail. Canon bar also uses a stencil to spray a canon design onto the foam with bitters. So I made an APDC stencil and did likewise; I’ll put a picture up on our webpage. This is a pretty complicated drink, which is completely antithetical to what Mike had in mind in the first place, but I promise we’ll get to his original idea in an upcoming episode. I did text him with this suggestion and he gave his permission. I just loved that there actually was a cocktail with canon in the name, and it is from Seattle.
