THE BEE’S GEES
The "Bee's Gees" cocktail was created by Sophie Burton at JoJo's Beloved cocktail lounge in Atlanta, Georgia. It is a modern, riff on the classic Bee's Knees cocktail, which is gin, lemon juice, and honey syrup. This one is a mashup of the Bee’s Knees and a French 75. For this cocktail you will need:
1 ½ ounces (45 ml) of Sloe Gin
Sloe gin is a sweet, red liqueur of sloe berry-infused gin, with a bittersweet flavor of cherry and almond.
½ oz. (15 ml) honey syrup
Equal parts honey and water, which you can mix easier ahead of time with hot water to dissolve the honey.
½ oz. fresh lemon juice
Champagne to fill
Add all ingredients, save Champagne, to a shaker and shake with ice. Double strain into a chilled coupe, and top with Champagne. Garnish with a lemon twist. Shall we?
