Having had little interest in cocktails outside of the odd pina colada etc, my mind was blown a few weeks ago by a drink I had in a dedicated cocktail bar in Central London. It was so well balanced to the extent of giving me the desire to properly learn how to mix a drink. As such, please see below for my reverse engineered take on the London Cocktail Club's catchily named 'Raison d'Etre.”

·         1 demerara sugar cube

·         1 bar spoon of soda water

·         2oz Santa Teresa 1796 rum

o    (This is Ryan talking) When I looked up this cocktail I found it on another menu I ended up getting the rum they had there, El Dorado 12 year. Both are excellent South American rums. But the El Dorado is made in Guyana, so, you know, it gets the edge for me. Jonestown.

·         1oz Pedro Ximenez sherry

·         2 dashes cocoa bitters

·         1 Luxardo maraschino cherry (to garnish)

In an old fashioned glass, place the sugar cube and moisten with the bitters. Add soda water and muddle until a paste is formed. Add rum and stir vigorously. Once homogenous, add cubed ice (the larger the better), leaving glass half full or half empty depending on perspective. Stir and add sherry. Stir, top up ice to fill glass and stir again - treat the ice as if making an old fashioned. Serve garnished with a single Luxardo cherry.
