I didn’t intentionally put two bourbon cocktails in successive episodes, but here we are, so I hope you guys like whiskey! This one is a tiki drink called the Halekulani cocktail. It originates in the 1930s in the Hawaiian Halekulani Hotel, at their House without a Key Lounge. This version is a variation by Shannon Mustipher from her book “Tiki: Modern Tropical Cocktails.”
· ½ oz. (15 ml) OJ
· ½ oz. lemon juice
· 1 bar spoon (about 1 tsp) grenadine
· A couple dashes of Angostura bitters
· ½ oz. demerara syrup
· ½ oz. pineapple juice
· 1 ½ oz. (45 ml) bourbon
o Rittenhouse bottled in bond 100
Combine all ingredients and shake with ice. Strain into a chilled coupe glass and garnish with a pineapple wedge and cherry.
This version is a little sweeter and I think better rounded than the original, though that one is also very good. The original is a little tarter and doesn’t have pineapple juice or the sugar syrup.
