APPLEJACK
You can use fresh apples, but it’s a pain and expensive. You need like 30-40 pounds to get enough juice. I did juice a few pounds of apples and added them to the main mash, but…just use apple juice.
· 1 gallon (3.8 L) apple juice
o The least processed and freshest you can find
o Make sure there are no preservatives
o I used Musselman’s Premium 100% Apple Juice
· 3 cups dark brown sugar
· 1 tsp distiller’s yeast
· 1 tsp yeast nutrient
o Can you use bread yeast and leave out the nutrient? Yes, but you may get less ABV and it may take longer to ferment
Mix everything together until the sugar is dissolved, pour everything into a container with an airlock lid and put it somewhere out of the way to ferment. The airlock not only lets you know it’s fermenting because it bubbles, but also keeps oxygen or anything else unwanted from getting into the brew.
And then I ended up dividing the result in half, keeping one part as traditional, “jacking” it in the freezer in water bottles, pouring off and keeping the result until it wouldn’t freeze anymore. I distilled the other half, which I ended up proofing down to 35%. And then I aged it for 6 months on white American oak. So we’re going to try these two today.
